when you are "possessed" you aren't in the 'driver seat'
you may not feel or even know what is happening around you
if link cannot "feel" this evil, how could he learn to like it?
also, gannon isn't evil for the sake of being evil, he just wants power, and doesn't care how he gets it, what he uses, etc.. that's what makes him evil. from gannon's standpoint, he probably sees himself as a would-be emperor, that gets foiled by a pesky faery boy named link. in fact, from gannon's point of view, i'm sure that link is the bad guy.

I don't think link would have been evil or possesed by gannon because then the goddeses probably wouldn't have picked him to be the chosen one, if they thought he would end up like gannon, and seeing as how there could only be room for one evil person...gannon would eventually try to betray link in attempt to gain more power...so probably not...but one could imagine
