By weight, we are 65% water, 20% protein, 12% fats, and a few incidentals on top of that. By number of molecules, we are pretty much entirely water.
Of course there's individual variation, but the bigger factor is exactly what you are counting and how - by molecule count, there's less than 2% difference between a person and a glass of water!

The heavier elements of the Periodic Table of the Elements (like iron and stuff) sunk down and ended up below the surface crust of our planet, while the lighter elements (like oxygen and hydrogen/water) ended up on the surface, possibly in the form of a very dense vapor which took millions of years to coalesque into the oceans, as forces of the newly forming planet begin to settle down against the explosive output of energy the formation of a planet entails at first, until with time, gravity wins out and everything separates into it's gravitational zone, and wallah, we have a planet whose surface (72%) is mostly covered in salt water.

It depends. On averag, males are approx 72 %, women are slightly less at 68% due to their slightly higer proportion of body fat.
The water content varies according to whether you are dealing with muscle, bone etc.
