I entered a pokemon modifier code on my pokemon sapphire version and now all i get is that pokemon?

That is the danger of cheats. What you've done is you've saved the cheat to your cartridge so it won't go away. cheat codes work by alterating the game programming so if you saved without turning the cheat device off, the cheat would've been saved. So unfortunately, you're stuck. You could try deleting the whole data and starting again but i can't guarantee any success.
