Science - APJ Kalam. Do I have to explain that?
Sports - Tendulkar. Amazing when he used to play well. (Would have named Sania Mirza, but her game sucks!)

I agree with skeptic_xyz.
I would like to add about philosophy. It was Gautam Buddha. His views were not just abstract ones. The followers of his principles have a decently composed life and are out of so called religious, racist, regional, etc. conflicts.
About the best man or woman... Again I believe it's Gautam Buddha. If we are able to understand his principles and follow them, we could get the best out of ourselves in all those fields.
All the best...
