I'm sure it's a secret recipe -

but you could probably make your own variation using either canned chipotle peppers or chipotle powder and combining with (I'd guess: mayonaisse and some lime juice)

I know someone that works there...they are not allowed to share all the secrets to any sauces or ingredients for them in a fast food corporation because then it would be punishable under law, and no one would want to go to Subway if they could make it at home.
