In a hotel, guests rent the room by the day. In an apartment, even if it's a serviced one, occupants rent by the month and in most cases have to commit to a lease that lasts from a few months to a few years.
A hotel room is completely furnished. A serviced apartment may or may not be furnished except for the cleaning.
A hotel room does not usually have cooking facility. A serviced apartment almost always has a kitchen.

A Hotel has a multitude of services and that is how they are rated. For example, having a night porter is a plus and of course they usually have restaurants, can have shops, Internet access etc plus room service and all the trimmings. A serviced apartment, normally has someone come in and clean, change sheets, towels etc depending on the level of service.
