There was no single religion in any of these regions. There definitely were many tribal religions (worshipping the spirits, the ancestors, etc.), but there were also organized religions. What they were is very difficult to figure out, since many didn't have written texts, and most of the texts that did exist have not survived; those that have are often written in languages that are no longer spoken.

For example, it is thought that a cult of the Staff God existed in South America since at least 2250 BC, but this is based only on a common motive in Andean art, an image of a fanged being with clawed feet carrying a staff in each hand. What the rituals of this religion were, or even what the name of the god was, is still not known (the name "Staff God" is only a nickname archeologists came up with to describe the way he is pictured).

I don't know exactly about Europeans before Christianity, it was more like that we call today mythology.
Africans had several spirit religions.
Native America like Mayas, Aztecs and Incas had a complex religious structure, and they have many divinities like Quetzalcoatl, Tlaloc, Manco Capac, Huitzilopoztli, their cult was dedied principally to the Sun, Moon, Nature, motherhood, etc
