I'm looking for a good guide on how to do a Jersey accent. Particularly something that uses phonetics would be good. Anyone know of any?

I have a plain ol' midwestern accent and am trying to learn a Jersey accent for a role.

I have a CD that I acquired at Barnes and Noble that specializes accents and dialects for actors. It has many different dialects on it, each with a monologue that is in a booklet and on the CD. You could try there, as it has been very useful for me.

The exagerrated NJ accent can be heard by watching the sopranos.
The people who say joi-sey are really few and far-between here - though i know a few people from the Bayonne area and hoboken area who add R's to words -like Warsh instead of wash
