The Romans did take a lot of art and literature culture from Greece, but to be fair, there were plenty of Greek ideas that were taken from Phoenicians and Egyptians too. There were also plenty of Greek colonies around the Mediterranean that allowed cultural cross-pollination with the Romans.

Since the Greeks were Older than the Romans,, I would have to say that the Romans copied the Greeks. The Romans liked to steel the best aspects of all the Lands they conquered. However they came up with brilliant ideas of their own as well. Aqueducts, Military Weapons and Formations, Literature. Government. There unique ideas in all these fields that the Romans came up with on their own.

The height of Greek civilisation was about 500 years before the height of Roman civilisation, so the Greeks could not have copied the Romans. It's certainly true that the Romans copied much of Greek culture, but they also introduced their own ideas. The Romans extended architecture way beyond what the Greeks could do.

One of my favourite quotes concerning this very issue is Horace's "captive Greece captivating her fierce captor” In many ways this is a very true statement and I specialising in Roman history as I am, have to agree with this.
All things Greek fascinated the Romans, and made them (the Romans) just as determined not to show this to anyone, least of all them. They went to Rhodes to study Greek...you weren't a gentleman if you didn't know any Greek. The myths and legends have an extraordinary amount of Greek influence.
But hey, you've got to hand it over to the Romans for being as powerful as they were. Military wise. Government wise (for a while). Yes they copied things from the Greeks...but...they improved upon it greatly.
One of my university lecturers said that despite Rome's adoption of Greek style Government...the Roman's had actually handled it better then the Greeks and had a better system planned out.

As far as religion the Romans renamed the gods but the Romans were well off without the Greeks and come on who doesn't like bloody war scenes.

I'd partly agree with her. The Greeks did influence the rising of the Roman empire. It doesn't matter anyway. Almost all culture has gotten ideas based on another working culture. It's how people progress. They take ideas that work and use them.

And the Greeks copied the Egyptians, the Phoenicians etc. None of the ancient peoples Had the copyright of anything. Actually, everybody copied Summers.
