Physically, you can only watch/record as many channels simultaneously as you have TV tuners for. Whether you're watching or recording is irrelevant; in this context they have the same technical limitations.
Example: If your TV has a tuner (with an aerial plugged in), and your DVR also has a tuner (also with an aerial plugged in, obviously). So, since you have 2 tuners, you can use both at the same time - in this case, watching the TV via it's tuner, while recording on the DVR on whatever channel it's set to. Remembering that anything with a tuner that does recording, doesn't necessarily have to output it's video to a screen for it to be working. Hence, if you had a VCR, DVR and TV, all with their own tuners and a working aerial connection, you could record on the VCR and DVR on separate channels, while watching TV on a third channel.
So, unless your DVR has dual-tuners (eg. two digital tuners, or both a digital and a separate analog tuner), it can only record one channel at a time.

I dont have a DVR, but I think there's like a certain number of hours you can record like 100 hours of space or something like that.
