Numbers are infinite. You can keep counting forever. So there is no highest number
The highest number we have a name for is a Googolplex.
A Googol is 1 followed by 100 zeros (a number greater than the number of elementary particles in the known universe).
A Googolplex is 10 to the power of a Googol. I.e. 1 followed by a googol of zeros.
If a person can write two digits per second, it would take around 1.1 times10 to the power of 82 times the age of the universe to write down a Googolplex.

Infinity is technically a number and is the highest number possible since it means a 1 with a never ending list of 0s after.

That's a dumb question. If you found the highest number all you have to do is add one to it or multiply by 2 or any other number and then you've got a new highest number.

The biggest NAMED number may be Graham's Number, it's so huge that Graham had to invent a new style of numerical notation just to begin to write it down.
Someone said that if you converted all the material in the universe into paper and ink you still wouldn't have enough to write Graham's number outright.
