hi i put a heater in my tank, and set it to 26 c, the pilot light is on, and its heating nicley, i know when it reaches the right temperature the light will go out, does the thermostat stay warm or will it cool and the pilot light recome on and heat up again, im a bit confused as directions dont tell me much, ?

Just like a thermostat in the house. Your heater will kick on and heat the tank. When the thermostat temp reaches just above the heat desired it may shut off. When the thermostat senses the water temp is dropping below the temp set it will kick back on.

Nothing to be worried about.It will maintain the temp in your tank.

The thermostat will retain the heat for a little while, but the heating process is off when the pilot light is off.

the thermostat does the watching for you. when the temp cools, the heating element turns itself on, brings it back to whatever you have the temp. set at. continually.

Yes, it will cycle through the heat/cool phases to help maintain the optimum temp. It won't maintain a constant 26ºC but will fluctuate a degree up or down as it warms/cools respectively.
