A winch man is one who operates the grinder on a racing boat to pull in the head sail.

I would suspect you would be on the head sail winch as it's the most active. If the boat is large and uses Grinders to trim the head sails perhaps it is an auxiliary crew member who would trim the boom vang or other lesser used winches.
