I work as an animal technician in a lab, and we don't only house white mice, but mice of various colours. Colour is typically dependent on strain, or sometimes if they are a knockout, which can k/o the coat colour. White mice are sometimes more practical for students to learn intravenous injection techniques as the tail-vein is more obvious. The most common coloured mice in our facilities are actually black!
Researchers use mice in experimentation as they are easy to house, cheap - to house, purchase, import/export, feed, clean - breed rapidly and readily, easy to handle (most of the time!), have a short life-span, and can be used for mammal models when studying diseases etc.
While I do not advocate animal experimentation, I must voice how tight and controling animal ethics and welfare are on any animal experimentation. As I work in the industry, I have first hand experience. The mice I work with are transgenic and many people have false illusions of how animals are used in research. There have been many advancements since the 60's and you would not come across vivasections or animals used for cosmetic testing - this is not approved by ethics and therefore forbidden (in most countries anyway). Where possible, researchers must reduce the number of animals used in experimentation, use alternative methods (computer models, tissue cultures etc), and must prevent/reduce animal suffering, provide analgesic where pain or discomfort occurs etc etc. Again, i do not advocate animal research, however I see its current importance (advancement in diabetes, MS, cancer research etc) and know first hand how well we take care of the animals used.

Rats and mice are used in a large proportion of laboratory experiments, mainly because they are easy to handle and cheap to keep because of their small size. They occupy less space in a laboratory than larger animals and can produce 50 - 100 babies a year. Albino rabbits are commonly used for eye and skin tests because they are easy to handle and they have a very limited ability to 'cry away' substances from their eyes during experiments.
I personally think its cruel.
