Sexual orientation is based on who you desire, not who you go out with or have sex with.
If a gay man goes out with a lesbian woman or has sex with her and desires her as a woman, I'd have to say he was bisexual, or at least had an exception in his homosexuality for her. Similarly for her.
However, I do know of some very queer, awesome people who identify as gay or lesbian, but still sleep with gay or lesbian members of the opposite sex. They call their sex "queer" rather than heterosexual because it's between two gay people. I know lesbian women who have, in a pinch, enjoyed topping gay men, even though they have no real attraction to men at all. I know gay men who have absolutely drooled over drag kings and whispered to them that "things probably all look the same from behind, right?".
Sexuality is hard to sit down and define. In the end, it comes down to the desires and motivations of the people acting. I'd wonder why they were so stubbornly sticking to gay and lesbian instead of 'bisexual', but they know better than me what they're doing.
I don't know that that has helped or just made things worse, but I hope it helped.

Yes, they would both still be homosexual. Sexual orientation isn't dependent on the actual act of sex, but on who you are attracted to. And they wouldn't be switching roles, gay men do not play a woman in their relationships and lesbians don't play a man. The dynamics in homosexual relationships are more diverse than that.
As the poster above me said, there are people who do that and that particular practice is known as "queer sex".

no he wouldn't be considered gay. This term is used only if a man is involved with a man...
Lesbians are girls involved with girls.
I see no reason why that man would still be called gay........
