Isopentyl valerate is also called Isopentyl pentanoate.

The products of saponification are Isopentyl alcohol (also called Isoamyl alcohol) and Pentanoic acid (or Valeric acid).

(CH3)2CHCH2CH2O(CO)CH2CH2CH2CH3 + H2O -->
(CH3)2CHCH2CH2OH + CH3CH2CH2CH2COOH

"why do we have the same chemical structure as mud" To be fair, you've been talking to someone who thinks mud is uninteresting. Some types of mud are very interesting for their catalytic properties. There are chemists the world over working for big-oil spending years of their lives studying mud, the stuff is just that damned interesting ... Nerd points for knowing what those muds are AKA.
