... and the participant is to fill in the missing letters (e.g. S_ _ N = SEEN). I'm not looking for a memory task, just a fill in the missing letters kind of thing. I am looking for research using similar tasks, but am having a hard time finding articles because I have no specifics. If anyone could point me in a general right direction, that would be great!

Do a search with key words "stem completion" or "stem word completion". You should find some research with these key words that will be helpful. It is a technique used in cognitive psychology.

i dont think that has a name but if it did would it be related to the thing where they mix up the middle letters of a bunch of word but you can still read it, rite? like this?:
