There are a number of ways...
1. Delete the songs from your iTunes playlist, this change will reflect in your ipod library as well.
2. Create a playlist that has only the songs that you want to be on your ipod, and set the syncing options to "sync from playlist" and sync from that playlist.
3. Select in syncing options the "only sync checked items" and uncheck any songs you would like to delete from your ipod.
4. Finally, you can select the option "manually manage music and videos" and then just add and delete songs directly from your ipod just as you would a playlist.

If you want to clear everything, just hit the restore option that should show up on screen when you plug in your ipod.

Turn on yr PC
launch Itunes
Connect yr Ipod to PC

delete the songs in iTunes
synch yr iPod (check iTunes menu)

then your songs in iPod will be deleted

If you want to clear (delete) ALL
then delete all songs

If you want to delete a song from your ipod, simply un-check it in your itunes library. Do delete EVERYTHING, hit the "restore" button on itunes when your ipod is plugged in.
