Please help me with my display. I have my food dairy, an interview and I need something else. Any ideas???

I think the above answerer has the right idea - recipes are good.
Your focus is on dairy? You may want to show the substitutions that some vegetarians use for dairy, such as soy milk - you could even make something and bring it to class for people to try -
Also I liked the idea about " famous vegetarians"

Put pictures of beautiful vegetables all over your poster. You should also put pictures of some of the other things people can eat on a vegetarian diet, such as peanut butter, legume, etc. That along with your interview and food diary will be great.

i'm a vegeterian...i'm from india n there are tons of states here where 99% of the population is vegeterian so i think you should have a few indian dishes :)

Give them food sample to taste, like tofu. Try Chinese, their tofu taste good.
