Depending on her personality, she could cry no matter how sweetly you tell her. Instead of "fired", say, "we have to let you go". You will have to tell her why...the incomplete work...so the next home she goes to will be better taken care of. You can create good karma here by being honest. :-)

Just tell her that you find you can no longer use her anymore. Tell her that circumstances change. I would give her a couple of weeks salary since you did not give her any notice.
You do not have to tell her she isn't doing a good job. Many people will probably say that you should for her sake, but come on, this is housecleaning. It doesn't take too many brains to tell if something is still dirty or mess when you are done.

tell her that you think you want to take up cleaning, so you will be doing the cleaning from now on and tell her her services are no longer necessary
or say something like i got fired, so i no longer have the money to pay you to clean my house

tell her ur moving. Or tell her u cant afford her sevices anymore. blame the kids, they make such a mess that I'm embarresed to have people over to clean and see what slobs they are. Tell her u and ur husband are getting a divorce. LIE LIE LIE LIE

Just tell her that you aren't going to need her anymore, That you can't afford the extra expense or that you just aren't going to need her anymore. It's hard to do but she's employed by you, you're not her friend you are her boss. Her job is just not acceptable.

Email her, tell her you have to cutback on some expenses
and you have to let her go, tell her when times get better
you will give her a call.. WIsh her luck and tell her you're going to miss her..
