Because:
Long, long ago in a galaxy called Marin County, California, George Lucas had said that his PLANS were for 9 episodes !! 7-9 dealing with the time-frame following the death of the Emperor and the re-establishment of the Republic !!
This would have been back in about 1982 while "Return of the Jedi" was in production... and I was wrapping up high school.
Besides George's "promise"... the Star Wars movies are terrific stories, wonderful cinematics, and good clean fun !

People want more installments because Lucas said at one point that he planned to make them. I guess they want him to stick by his word.
There were 2 made for tv Ewok movies (that I saw on dvd at Best Buy) that I always took to be the sequels to the Star Wars series even though most people don't acknowledge them as such or have ever heard of them.
But beyond the made for tv films, I can't think of what a possible storyline would be unless they made a film version of Timothy Zahn's books.

You could argue that the Extended Universe negates the need for a third trilogy. The time right after Return of the Jedi would still be focusing around Luke, Han, and Leia as they help to rebuild the New Republic and the Jedi Order; therefore, they would need to change some of the novels into screenplays.
Frankly, I don't think there's a need for a third trilogy.

Back in the 1990's, I ached for episodes 7-9. But after seeing the HORRIBLE episodes 1-3, now I hope George never makes another movie for the rest of his life.

I dunno, but ask my hubby. He has 4 different copies of each of the 6 episodes, VHS and DVD. And he was wanting to get the newly released version because it is slightly different than the others he already has.
And for the first answerer, maybe that makes him a geek, but he's my geek and I wouldn't have him any other way.

If you ever read Timothy Zahn's books or the Dark Horse Comics based on this time frame you wouldn't ask that question.
Mara Jade and Uber-Luke. Nuff said!!!
