My husband is seeking employment in the mechanical/maintenance engineering industry, fitter/turner, does anyone know any reputable agencies or companys to apply to as there seems to be so many.

I can't speak about employment in the engineering industry, although I imagine he won't have much difficulty finding work.
I have taught in the region, however, and there are a huge number of excellent schools. Fees can be quite expensive, though, so you should shop around to find one you like for the right price. You don't mention where you're coming from, but there are international schools catering to all different nationalities and curricula. If you find a school you like, Google it to see if you can read reviews from parents.
Dubai is a great place to live, and I'm sure your kids will love it there.
