The general consensus below is that Ethernet is faster, apart from one person who is saying that USB is faster.
Well, let me settle this for you.
Ethernet is by far, the fastest. There is no competition between the two. Plus, for certain applications like Broadband and the like, additional drivers are required to use the USB cable.
When and where possible, you should always use the Ethernet cable. 1. Coz its faster. 2. Coz its made for that exact purpose. and 3. It leaves you another USB port free, and if you are like me, with gadgets left, right and centre, free USB ports are important.

If its Gigabit then ethernet is, if its fast ethernet then USB 2.0 is faster and if its just ethernet then USB 1.1 is faster.

Ethernet is used for connecting computers, and is quite fast. USB ports are generally for connecting peripherals (flash memory, printers, I-Pods etc) and is normally fine. For peripherals though, Firewire is the latest and fastest.

The "coldvoiceofreason" has it right, but distace is also a major factor. USB is distance limited, ethernet is certified to 328 feet (100 meters) but can be re-transmitted by a hub/switch.
