I'm pretty sure I'm using white Crayola Model Magic for the bones... but I have no idea what to use for the tendons! Help!

Go into the Sewing section of your local wal-mart. You can get packages of elastic (like they use in waistbands) in various sizes. It'll work really well because the fibers actually run the same direction that the fibers in tendons run.

How about plywood or balsa wood and rubber bands?
