Well, not quite - it's vital for birds to extract as much water from their food as possible, and retain it as well as possible. They can't carry around lots of weight, since they fly, so they don't take in very much water as water and they try not to lose very much. What they do is concentrate nitrogen waste very much more than we do (so it doesn't need as much water to flush it out) and mix it with the more solid waste in the cloaca. Having extracted as much water as possible or desirable, they dump the rest as your standard dropping. Often on take-off, especially if someone in a nice outfit is underneath.

Yes they do. Both male and female birds have their excretory orifices inside a small pouch called a "cloaca". So their "droppings" usually consist of both urine and feces.

My understanding is that birds defecate rather runnily and therefore include urine with their feces.

A BIRD'S urinary and digestive tracts empty into a chamber called the cloaca, from which appropriately messy droppings are extruded with no regard for any victim's sanctity or status. "Hoc pro avibus est." :D
