You want to look up the meaning of the words hydrophilic and hydrophobic. A detergent molecule has two ends, on emore soluble in grease, and the other more soluble in water. What in effect happens is that a bit of grease (or dirt) is surrounded by detergent molecules and made to become soluble, and thus lifted off the clothes.
