Those 'stubby little eyes' are the potato roots growing out. Just as a radish has little root shoots growing out...same as a potato. Both radishes and potatos grow underground. Just in case though . . . don't keep staring at a potato's stubby little eyes...you might it feel self conscious. And...in a staring contest...since it doesn't blink...the potato will aways win...so don't mess with him. Yet...if it does blink...run.

That is where the new potato grows out of, like the seed. That's the only part of the potato with protein but we don't like it because it is tough and bitter. That's how Irish people could live entirely on potatoes until they all died off.

And their stubby little eyes grow.. its really scary when the long green tentacles come from their eyes. My cat hides under the sofa.
