Hg stands for Hygrargyrum, Latin for liquid silver. "Liquid silver" of course, means Mercury, which is one of the densest liquids easily available. To measure atmospheric pressure, the first scientists (Torricelli among others) used a glass tube filled with mercury turned upside down in a container filled with more mercury. This was the first barometer. It turns out that the air pressure is measured by the height of the mercury column, without any need to worry about the shape of the tube. So the height of the mercury column, measured in millimeters gives mm Hg. Note that millimeters were introduced with the French Revolution (approx. 1793) much later than Torricelli.
