Try using Windows Media Player. It's simple and effective.

It is possible to extract a CD to an uncompressed format such as "WAV", although it would take up a lot of space for no good reason. Most people use MP3, AAC,WMA, Ogg Vorbis etc to compress the file for better storage. The format you choose, is more down to the player that you own. If you only use your PC, then you could just use WMA Loss-Less or If you have an iPod, then it would be MP3 or AAC formats.

You have to extract the audio from the CD with CD ripper and convert it to any format your ripper allowed and not necessarily mp3 only.

It is possible. Just adjust the settings in your conversion application to save as the format you want. It's usually File >> Preferences or Edit >> Preferences.
