Hi UK Builder here, It could be a thermostat problem or one of many other problems. But from the information supplied it sounds like a flow switch is sticking or silted up. The flow switch senses the flow of water, when the water stops flowing the flow switch turns off the boiler but in your case it does not switch it off as it has not sensed that the water has stopped flowing. And so the boiler carries on boiling the water hense the noise. The gas is then switched off as a safety feature to stop the boiler being damaged.

I had exactly the same problem a few years ago and found out that the thermostat to the water boiler had broke and the hot water was boiling that much that it kept bubbling and making them noises through the pipes. Hope this helps. Re. your pilot light you may have to speak to an engineer. I recommend British Gas if you have an insurance cover with them and you will not be charged for the parts. Good luck.

Pilot light going out sounds like the "thermo-coupler" a device for keeping the gas valve open when the pilot light heats it up is faulty. Steam or air in the system, have the radiators been bled at all or the system checked.
What make is the boiler? with the experience I have had with British Gas "engineers" I would recommend the gas boiler manufacturers engineers.
