I do both. It is very good for a lawn to have the clippings remain as it increases nitrogen in the soil and composts your yard as it dries. It helps your lawn retain moisture and discourages weed growth. However, I bag the clippings also to add to my vegetable garden. The clippings are high in nitrogen and will benefit my plants. Grass clippings added to a compost pile gives the compost the green material that a good compost pile needs. Dried clippings also make a good mulch around other plants. Not fresh clippings as these can burn the plants but dry clippings. This will aid in weed control. I throw the dried clippings in bare spots in the garden to discourage and hamper weed growth. To dry, just spread the clippings out and give them about a day.

the amount of grass removing decides to bag the clippings or to mulch the clippings. When removing more than 1/3 of the grass clipping- always bag. When removing less than 1/3 mulch. Typically, grass is mowed at 1/3 height of cut so if you like your lawn at 3 inches then you should let the lawn grow 1 inch before you mow. The purpose for mulching is to leave the nutrients with the grass but since people bag this requires them to apply fertilizer more frequently.

For the most part, we mulch. It returns the clippings to the soil and helps build organic value. Some of the fertilizer that was added to make the grass green is re-deposited of the grass when mulched. It also helps control soil moisture.
Bagging is only done (at my house) when the grass gets too long, too thick or too wet to mulch well. If you're cutting more than a third of the grass's length, or if your turf is VERY thick, it might be a good idea to bag.
Further, bagging just adds to the solid waste stream.

I only mulch. My yard doesn't have much dirt under the grass, so mulching will help build it up eventually. Plus, a big thing is that you don't have to unload a bag, which is a pain. Mulching is better.
