If I were asked out to dinner I would wait for my suitor to order and also not be afraid to ask what something is on the menu if it is not already explained. I would order price wise equal to my suitor or less, it is only polite. I would definitely have a glass of water, perhaps one glass of wine or mixed drink, if my suitor has alcohol, generally I skip the appetizers and salad because a meal is more than enough, or just the opposite, a salad and an appetizer as a meal. I almost always order dessert, as long as I know I am not over full and can eat it all.
As for what would I order? I love seafood. I love to try new things as well. The same with desserts. I would request recommendations and then decide.
If I were by myself, I would ask for recommendations and still order just a salad and an appetizer for the meal or just the main course. Always dessert! Always water, and pending on mood, either a glass of wine (recommended with whatever the order is) or a light mixed drink.

Appetizer: onion petals. Main dish: filet mignon, very rare; drink: Coke; dessert: Pumpkin Cheesecake; side dish: tossed salad with bleu cheese dressing and/or cauliflower with hollandaise sauce; water on the side; and maybe a glass of white wine. Afterwards: hospital treatment for a cholesterol-induced heart attack.

Freshly delivered Hawaiian fantail shrimp lightly battered with from scratch tartar sauce served with oriental hot green tea for appetizer
Followed by 2" cut porterhouse steak done medium served with a mini ceasar salad with light oil dressing and twice baked potato with freshly made sour cream and a half glass of merlot as main course
For dessert, a small portion of cherries jubilee and kona blended coffee (light cream-- no sugar)
Final touch -- one hand rolled Producto with four fingers of Kentucky Bourbon
Now give me a place to lie down-- because I'm already dreaming !!!

I would have a glass of water, a salad, and something on the menu that I can understand-like chicken. I'd probably have a few shots of bourbon to relax and have chocolate cake for dessert.

Fillet Mignon, Lobster tails in butter, pickled vegetable salad Japanese style, very fresh tuna over a bed of sticky rice, New England clam chowder with no potatoes just clams, champagne imported of excellent vintage, 200 year old unblended whiskey, water, and a premium grade double fudge chocolate ice-cream over real German chocolate cake. Yum.
