for proper tire profile a 6.5 inch rim is what youre looking for. 190 use 6 inch, 180 5.5, 170 5 inch. You get the idea.

It depends on the diameter of the rim, and the height of the sidewall. The taller the sidewall is, the more flex you have and can go to a smaller width rim because the sidewall gets narrower at the bead and has more flex. If it's an 18" rim (which is typical) you can go to as low as a 5.5" wide rim.

200mm is about 7.8 inches and you always want you're wheel to be a little narrower than your tire so if possible don't go thinner than 6.5" and don't go wider than 7.5"
