Is this because my coolant might be a little low? I can't check it right now, because I was just out driving my car. It usually just stays a little above the bottom mark, it hasn't gone up past there unless i was parked at an idle for a while.

Check the coolant when the engine is cool. The coolant should not be circulating. If it is, then the thermostat is not operating properly.

Sounds like the coolant level is low. When your car cools off check it. Since you have a new thermostat It is that part that is bad.

Thermostat or maybe temperature sender unit. If the gauge is almost at the bottom, that is too cold.

Did the fan kick in and cool it back down? Otherwise, and in any case, check the coolant lever. You can check it warm as well; check the "HOT" level.
