It's just a way of indicating that the person who wrote it is laughing - lol stands for Laughing Out Loud. It's also used to indicate that something is meant to be funny or amusing, as that can be hard to get across on the internet sometimes.
Other people use it simply as punctuation, as you might say 'urm' when speaking out loud.

Lol means laughing out loud, but ironically, I find that most people aren't actually laughing when they type that. So I think it's really more of an acknowledgment of the fact that the person understand that it was a humorous statement. Sort of like when you're talking with someone, and you say something kind of funny, and they kind of chuckle or smirk, but don't really laugh. Just my observations though...
