I want to run 2 dhcp servers in a linux machine with 2 NIC cards. each server for each card. the Ip address of each card was in different VLAN.....

Set up two different scopes, each with a seperate IP range for your two VLANs. Configure the scopes so that each only listens on it's own NIC card, not both. If you want the two subnets to communicate with each other, you'll have to set up routing between the two nics.

that's likely that you've a ordinary Cat5 cable or some thing similar. For an instantaneous connect between 2 computer you'll want a crossover cable or a crossover adapter appropriate to one end of a ordinary Cat5 cable.
