I am an owner of a food business, my business has a large freezer contains 850 cartons of frozen dough, each carton has 130 frozen dough, this freezer had failure freezing for certain of time, now I have some damaged cartons, so I need to make a selection of some cartons to make some tests of dough quality, I have some statistics knowledge, but never had real experience on it.
I was told that there is a way that called engineering probability & statistics should help me in the situation.
What is the correct way to make this selection for inspection?

this has left engineering (50% need testing) every failure requires upgrading number tested
and gone to health and safety 100%
