If you started with the planet as it is today and removed the water suddenly, there would be some rebound in the ocean basins in response to to removal of the pressure of the water. More generally, however, many geologists think that in the absence of water there would be no plate tectonics, and in that case the geology of our planet would be entirely different. With less geological activity, one of the consequences would be the survival of many more impact craters.

Ummm, it probably would look something like the moon... dry and barren with no life or vegetation. Life cannot exist without water, so that would be my assumption. Hope that helped!
