Can someone explain the relative solubilities of the three carotenoids in the water and solvent phases on the basis of molecular structure please?

The three carotenoids are Violaxanthin, Lutein and Beta Carotene.

Violaxanthin is (IX) in figure 4. It is a di-epoxide.
Lutein is (VII) in figure 4. It is a di-alcohol.
Beta Carotene is (III) in figure 4. It is a hydrocarbon.

All three are considered lipophyllic, not hydrophyllic.
