My cousin owns an ice cream shop and he says the real money is in the soda. It costs all of 3 cents a cup and they can sell it for 3 bucks. He said if he could he would just serve soda.
I worked at a pancake house too though and everything is overpriced. For us to make 5 pancakes (including labor, electricity, cleaning the plate, everything) was about 36 cents. They charged 4.99 when I worked there 6 years ago so I am sure it is a ton more now! Coffee and pasta are other things that cost next to nothing but can be resold at a 1000% increase.

I am not sure I understand your question. The presentage of the cost of the meal? The presentage of food cost the restauraunt has to pay?
The pop syrup costs about .05cents per 12 oz. Pop is where restaurants make the most money.
