The actual public holidays are Fri 6th, Sat 7th, and Mon 9th.
The shops are closed on Fri and Sun only, Open on Sat and Mon. This is based on Bondi Junction Westfields trading hours meaning that most shops should be the same, except for places considered tourist desintations like Entertainment Quarter (Fox Studios) which will be open on all days.
