what are other proteins that can be produced by these techniques (ex.insulin). Who would need them and why?

You can use them to produce just about any protein -
insulin - diabetics
biodegradable plastics - environmentally friendly bags
any protein your body uses, you could make this way.

I once did it with the gene for bioluminescence. It was really just cool - no real use.
