Very carefully.

There are literally hundreds of varieties of bamboo. The range in size from about 1 foot tall to 80 feet or more. Most being in the 2 to 25 ft range.

Some of them are "runners", and need containment (SERIOUS containment - not just "sinking a pot" like you might do for mint). Some, even with containment, will eat your neighborhood for lunch. Some are "clumping" and behave themseleves.

Some are winter hardy, som aren't.

Go to your local nursery - and see what they normally carry. Those will most likely do well in your area. Decide what you want in terms of height, and color (green, yello, varigated, some are darker, reddish or blackish), and how much effort you want to put into prepping (low maintenance, or expensive containment and regular monitoring).

Choose those varieties that fit the bill. Plant. Enjoy.

Be very careful. Some types will absolutely take over your lawn, and your neighbors lawn, and their neighbor's. Though if you keep in mowed regularly its really not a problem. Or consider growing on containers if possible.
