Personally I wouldn't recommend Romeo and Juliet or Prospero's Books. There is way too much going on in the background of Prospero's books and it distracts fromthe actual story. Plus it really is just The Tempest with a lot of unnecessary distractions. I'd recommend the update version of Richard III.

William Shakespeare's Romeo & Juliet (1996) directed by Baz Luhrmann was one that I felt was particularly entertaining. I also find it particularly amusing that it is an adaptaion of an adaptaion, in that Romeo & Juliet was an adaptation of Pyramus and Thisbie.

Oh gosh, there are so many. The one that leaps out for me would be "West Side Story" as a modern adaptation of "Romeo and Juliet."
