There's actaully a REALLY big different from them. I've read the book and seen both the movies. The older one with Jack Nicholsonis very different from the book. The new movie that came out a couple of years ago is basiclly page by page of the book. It's also not as scary or as cool. For instance Johnny does not use an axe at the end but a cricket club- lame. There's no maze in the book or the new movie, but there are bushes that look like animals that move and they are in the new movie and the book. The book is good, the new movie sucks, and the older movie is the best out of the 3. I can actually get really freaked out by watching the older one.

But annnnnyways... The main differences from the 1980 film and the book, like you asked are these:
-Dick is killed in the movie and not in the book.
-The Overlook Hotel in the book is destroyed when the hotel's boiler explodes.
-Also, the exploding hotel is replaced with Jack dying in a hedge maze, but in the book there is no hedge maze, instead there are hedge animals.
-In the movie Jack uses an axe, but in the book there is no axe, it is a roque mallet. Roque is not mentioned in the movie.
-In the movie, blood flows out of an opening elevator in some scenes. This is never mentioned in the book.
-In the movie the haunted room's number was changed from 217 to 237.
-Jack never says "Heeeeere's Johnny!" in the book.
-The book never had the writing "All work and no play makes Jack a dull boy" on Jack's writing

Well, the cook doesn't die, for one thing. That part about the movie really ticked me off. He comes all that way and gets killed like 2 seconds after he walks in the door. Also, there's no maze of hedges at all. There are bushes shaped like animals that come alive. Johnnie dies because the boiler works up too high a steam (something he's supposed to be keeping an eye on) while he's busy trying to kill the family. He gets blown up. Wendy and Danny escape with Halloran, the cook and they end up living with him, at least temporarily. Book is better than the movie. Always is with Stephen King.

It's been a while...
But a big difference is there's no ax in the book, he has a croquet mallet.

I believe the book ends with the boiler exploding in the hotel, killing the father.

There was a 3-part made for TV movie from ABC, NBC or CBS that I thought was a much more faithful rendition.

the book, of course , can go into much more detail. The book scared the living daylights out of me. I read it when I was sixteen. No, the cook does NOT die, but just READ it- I don't remember any other specific details at the moment.

In the novel, Jack Nicholson doesn't play the bad guy.
