My usage note says that in most cases the words are interchangable, the only essential difference being that "utilize" often sounds more pretentious. So, pick the one that sounds better. For example, "use your head" definitely has a better ring to it than "utilize your head".

"Utilize" doesn't mean "use", even though people often mistakenly use it that way. It means "to make (something) useful."
