Try Sarah Slean much like Kate and Tori.
I have all of Kate's even an interview disk (got to love that accent). Sarah Slean is the next best thing.

Good music choices, I really love Sarah McLachlan. Have you ever tried Celtic Woman? Or the group Bond? They're violinists who do some classical songs, but with a little modern twist. Awesome. This might be a tiny bit too metal for you, but the band Nightwish is also one of my favorites. They combine the hardcore stuff with some gothic choral voices, and there's a classical twist to some of the songs. They're amazing.

You could take the Lilith Fair route. There are so many fantastic artists that were at the concerts. Paula Cole has some good music. Indigo Girls, Alanis Morissette, Lisa Loeb and my girl Ani Difranco are also good choices. She has some AMAZING music. I highly, highly suggest checking her out. Some of her songs that I adore are "Firedoor", "32 Flavors", "Shroud", and "Modulation".
