I have researched on the application of this term in optics yet I'm still confused. Can anyone give a simple explanation as to what this is?

A lazer is the source. Is that the question, or is the nature of coherent light what you want to know?

It's a source of light , the photons of which are aligned. In other words, all the photons of that beam of light are moving in the same direction. That's a laser beam; a beam of coherent light.
