BluePhoneElite (version 1.1.1) is one of the coolest Mac apps I've come across. This is one of my secret weapons I use when trying to convert PC users to Mac. It's so cool, you'll probably catch a cold using it. Download the demo (ver. 1.1.1) and see for yourself. Your Mac and cell phone needs to be bluetooth compatible.

Depends what you mean by cool, I think there's loads of cool stuff on it already.
Garageband for a start, even if you're not musically inclined you can find yourself going out to buy a USB music keyboard just for the fun of it.
Get into Comic life too if you've got a digital camera or a camera on your mobile.
Beg or borrow a DV camcorder and give iMovie a try too - very simple to make som pretty stunning home movies which you can transfer to iDVD.
Skype is one of the best pieces of software I've ever used, really handy and works great if you've got a mac with a webcam.
Second Life is not exactly my thing but I'm sure a lot of people like it.
Google Earth will have you skipping across the globe trying to find your home and those of your friends.
Gamehouse does a lot of fun games for the Mac and of course there's World of Warcraft which has a great downloadable demo (3 gigs though).
The list could go on and on but half the fun is finding stuff by accident for yourself

If you have an iSight camera, try out DotMatrix. It's like Photo Booth on crack.
SketchFighter 4000 Alpha is fun.
Mac the Ripper and HandBrake for ripping DVDs.
AudioHijack for recording audio from any application. I use this to rip audio from YouTube and DVDs.
