Postulates are assumed true, while theorems can be proven true.

Postulate, or axiom, indicates a statement that is agreed by a lot of people to be so obvious that no proof is necessary. Basically, it is simplified for younger students to understand the principles of a more complicated subject.

Theorems are propositions that have been or is to be proved on the basis of explicit assumptions. Its pretty much what motivates mathematicians to do all day.
